April 2013, Charlotte - NC.

We went to BWW one night after Scott's work.

I love making and eating lots of salads, specially during SUMMER! :) 
Today, we had lunch with one of Scott's family friend, Jim Anderson. He was here in Charlotte for business, they live in South Carolina. I've heard so many great things about Jim and Jodi. :) I was excited to meet him. He was kind enough to treat us to lunch, we went to Maggiano's Little Italy. It was delicious! 
The other day I made this super easy recipe for pumpkin spice cookies. 
Here is the recipe:
- 1 box of spice cake mix
- 1 (15 oz.) solid-pack pumpkin
 - 1 bag of chocolate chips.
Some people like to use:
- 1 cup chopped walnuts or 1 cup chopped pecans, or even 1/2 cup of raisins
- 1 cup crem cheese frosting if you want to frost them.

Directions:
1. Preheat over to 350 F.
2. Spray cookie sheets lightly with vegetable spray.
3. In a large bowl, mix together the cape mix and pumpkin.
4. Stir the chocolate chips in the mixture.
5. Drop rounded spoonfuls onto the cookie sheet. 
6. Bake for 8-13 minutes, depending on the size of your cookies (I usually do 10-11)

Now after making all these goodies, I watched a documentary that you probably heard about it.
It's called Fat, Sick and Nearly Dead, basically its about a guy that changes his eating habits for juicing. I got inspired and did some juicing. I still want to go on a juice fast for a week or so. I have to plan accordingly. 
I will put some recipes of juice that I would like to try! :)
I did with whatever I had at home.
Ingredients: 
- Pineapple
- Apple
- Beets
- Little bit of Concentrated Mango Juice
- Ice
Other Recipes:
Apple-Pear
1 Apple2 Pears1 Piece Ginger (thumb sized)

Carrot-Kale Combo

1 Green Apple
3 Handfuls spinach
6-8 Kale Leaves
4 Large Carrots
1 Piece Ginger (thumb sized)

Green Lemonade

1 Grren Apple
3 Handfuls Spinach
6-8 Kale Leaves
1/2 Cucumber
4 Celery Stalks
1/2 Lemon 

All Green

Use as much greens as needed
Kale or Collards
Spinach
2 Handfuls Parsley
2-3 Celery Stalks
1/2 Lemon
1 Piece Ginger (thumb sized)

Apple-Beet-Carrot
1 Apple
2 Beets
3 Large Carrots
1 Piece Ginger (thumb sized)
Spinach / Kale (optional)

Spinach-Fennel-Cucumber
1 Fennel Bulb
1 Cucumber
2-3 Celery Stalks
Loads of Spinach

Mean Green
1 Bulk of Kale
4 Stalks of celery
1 cucumber
2 granny smith apples
1/2 lemon
ginger root (thumb sized)
